
Watermelon Margarita
After 6+ years of living in Playa del Carmen and working in the catering & events field I am venturing out on my own and proud to launch UNO Events & Catering www.unoevents.com !

I am super excitied to have new recipes, ideas and look. After several years of requests from Playaenses (Playa people) to offer my delicious salsas and food in a less formal matter,it became clear that I needed to offer this service. Thus, UNO ToGo has come to fruition. Will it be a case of build and they come? Only time will tell but I love new adventures to keep me fresh and motivated! During the hot summer months I take time to enjoy my Playa life which includes the beach and of course some fiestas! I combine my love for food, good drinks with entertaining and testing out new recipes. There is no shortage of people who are willing to participate in my highly scientific research food and drink tastings. One afternoon while hanging out in my pool with some friends I concocted a watermelon margarita which was a hit even among non-tequila drinkers. One might this does not exist in Mexico but indeed it does… On the second round; only with research in mind, I chose to rim the glass with a chile salt which made the drink even better. I used Tajin which is a brand name of a chile salt that is typically used on raw veggies and even fruit.

Tajin Chile Salt
Watermelon Margaritas
Ingredients:
4 cups cubed seedless watermelon
3 limes
1/2 cup good tequila
2 tbsp triple sec or contreau or live on the edge with gran marnier
simple syrup (jarabe) to taste
3 tbsp tajin or chili salt
3 cups ice
Directions:
Place the watermelon in the blender and liquify. Note* if you have seeded watermelon, blend then strain. Add the juice of 2 limes, tequila and choice of other liquor and simple syrup then blend.
Rim 6 glasses (4 in my house!) by cutting a slice of lime and run over the top edge of the glass. Place the chili salt on a plate and dredge the top of the glass to coat.
For blended margaritas add the ice then blend or place the ice in glasses and top with margarita mixture.
